Meet Chef Somchai

Le Cordon Bleu-trained with over fifteen years behind the pass, Chef Somchai runs two separate kitchens at Villa Princess Maria — a main-villa station for formal multi-course dinners and a cottage kitchen where he prepares tray breakfasts each morning. His range covers royal Thai cuisine, Andaman seafood landed at Rawai pier, East-West fusion, and open-flame grilling on the outdoor BBQ deck.

Cooking for up to twelve guests across two buildings requires orchestration as much as skill. Somchai plans menus in advance with each household — accommodating children's portions in the cottage and a wine-paired dinner for adults in the main villa on the same evening. The long terrace table seats sixteen, making it the natural stage for his signature group feasts: whole-fish barbecues, family-style Thai banquets, and Saturday seafood nights sourced directly from Rawai's morning boats.
